Head gasket: leave it out, add the Mazda OEM head gasket, or add a Cometic MLS head gasket in the suggested stock size for the engine you picked.

On the VVT (2001-2005), the Cometic option is the 1999-2000 Cometic head gasket, the industry-standard fit for that engine.
